Carrot and Zucchini Muffin


Adventure friends, ever wonder what would a perfect snack that will give you energy on hike, or help you start the day with a smile? Well, wonder no more, we have found it! (ok, maybe perfect may be overselling, but they are really good)

Here is the recipe for carrot and squash muffins

Carrot and Zucchini Muffins (app 10 muffins)

1 Egg

1 Spoonful of vegetable oil

½ Cup of milk

2/3 cup of brown sugar

1 teaspoon of vanilla extract

1 ¾ cup of whole wheat flour

¼ cup of flax seeds (whole or crushed)

2 teaspoons of baking powder

½ teaspoon of salt

1 teaspoon of cinnamon powder

¼ teaspoon of nutmeg

1 Cup of apple (pealed and cut in small squares)

½ Cup of grated carrots

½ Cup of grated zucchini

Preparation:

1 In a big bowl, beat the egg and add the oil, milk, brown sugar, and vanilla

2 In a separate bowl mix the flour, flax seeds, baking powder, salt, cinnamon, and nutmeg

3 Mix the contents of the two bowls together, until it is smooth. Add the apple, carrot and zucchini

4 Butter the molds and pur the mixture in. Bake for 18 to 20 min (or until firm) at 200°C

And that's it folks, delicious muffins ready to go.
